Only one fact is known: It is baked at 450 degrees Celsius for 90 seconds at the most – that’s all it takes for the perfect base. "Of course, our guests love all our pizzas," jokes the chef. However, there is one favorite: the verace pizza Napoletana, the margherita. In English: the "genuine Neopolitan pizza". Only pizzas that are 100% authentic both in terms of ingredients and preparation are allowed to carry this name. The Associazione Verace Pizza Napoletana (AVPN) closely monitors this. The chef himself regularly eats his way through the whole menu – but always returns to his favorite dish: the pizza Sorrento with Parma ham.
