On the most beautiful terrace on Lake Maggiore, the best is on ice for the time being: lobster, sea bream, sea bass, sole, black tiger prawns and scampi in the large display case! Chef Nicola Montalti puts the fish on the grill. He prefers to remove the crabs from their shells and mix them into his al dente spaghetti.
Pasta, risotto, spaghetti and much more
“Pasta mista in brodetto di pesce": a scorfano (scorpionfish), vongole and canocchie, a slender crab from the Mediterranean, characterize this exclusive pasta soup. The risotto with peas and two astonishing layers on top is very pleasing: a wafer-thin slice of Colonnata bacon, a mosaic of Gambero rosso. For the main course, a classic sole, quickly and cleanly removed from the bone.
Spaghetti alle Sarde
The best spaghetti in this magical place: Spaghetti alle Sarde! Pasta from a small factory in Garganio, served with sardines, aglio e oglia and bread soaked in cuttlefish. In Sicily, this used to be “cucina povera” because sardines are plentiful and these fish are not expensive. Today, the “alle Sarde” variant is just right for a luxury resort & foodie paradise like the “Eden Roc” in Ascona.
