Hand-pulled noodles
Comeback of a pop-up highlight. Last year, Zurich was queuing up for “Biang Biang” noodles - a specialty from the north of China. It owes its name to the sound it makes during preparation: The dough is pulled apart at the ends by hand and simultaneously beaten on the work surface until it reaches the desired length.

If you missed it, you now have a second chance: the “Dian Dian Mian” pop-up is back at Bar Milieu on Brauerstrasse until the end of October! Nothing has changed in the wonderful “Wow with a cow” version: wide noodles and an aromatic beef goulash with roasted tomatoes, crunchy radish cubes and pickled ginger. The standard version with soy sauce, pak choi, tofu, oyster mushrooms and peanuts has been given a small upgrade: instead of minced meat, crispy pork belly is now available as an option. New on the menu: a rice noodle soup with lots of vegetables from the Yunnan province and chicken wings with sesame and ginger sauce as a special.
