«Burro Concept x Acid», Zürich (Pop-Up)

Focaccia doesn't need much of an introduction: the flatbread has long since made it from Liguria to the world stage. A generous portion of good olive oil provides the golden-brown crust and gives the fluffy bread its typical, fruity and hearty flavor. Focaccia tastes great on its own as an aperitif. But it tastes even better sliced and topped, as is currently the case at “Acid” on Langstrasse at “Burro Concept”: a pop-up serving the best focaccia sandwiches in town from Monday to Saturday over lunchtime until the end of August.
Changing menu with regulars
The menu includes five varieties - all of which taste excellent - two of which are regulars: “Migliore” with Parma ham, stracciatella di burrata, semi-dried tomatoes and basil and Sicilian “Caponata” made according to a family recipe with Parmesan cream. The others are always changing: mortadella with ricotta and lemon zest or coppa with pecorino and artichoke cream.
The duo behind “Burro Concept”
Behind the pop-up are Virginia Fasanelli and Guiseppe Scafiti, an art historian and a banker who met while studying at the University of Zurich. With “Burro Concept”, the duo with Italian roots want to dedicate themselves to simple, traditional cuisine based on good basic products.
