«Sala of Tokyo», Zürich

The oldest Japanese restaurant in Switzerland is an institution. Since 1981, the “Sala of Tokyo” on Zurich's Bahnhofsstrasse has been the culinary embassy of an increasingly popular cuisine.

The patron is committed to keeping the heritage alive

Today, Japanese cuisine is an integral part of Zurich's dining culture. Decades ago, things were different and the “Sala of Tokyo” run by legendary landlords Ernst and Sala Ruch-Fukuoka can be celebrated as its pioneer with a clear conscience. However, the building at the former location is no longer there. Lorenz Muster took over the restaurant in 2013 and has since expanded it with care and a sense of Japanese (food) culture. This also includes modern concepts such as “Yume Ramen” and “Tsuru Tsuru Noodle Bar” at other locations.

Seven-course surprise menu “Tokubetsu Kaiseki”

Traditional culinary disciplines are cultivated in the main restaurant: The best insight into the fascinating flavors of Japan is provided by the “Tokubetsu Kaiseki” menu, which includes the traditional menu of this cuisine originally developed as a tea ceremony. These include octopus canapés with chili and lime, an impeccable miso soup made according to a house recipe from 1981 (!), a delicious salmon tartare with onsen egg and oysters with yuzu lemon. Also recommended are the tempura variations with homemade sauces for dipping, the highlight being the strips of Wagyu beef with black truffle and egg yolk - a real umami bomb!
